I would like to edit reminders in Task and Checklist spaces. Editing is faster than deleting and recreating a new message reminder.

Editing reminders used to be possible but was buggy so was temporarily disabled; will look into re-enabling, thank you for noting this.

Tip in the meantime: If you're just looking to edit the reminder date, you can click on the timestamp next to it and choose a new date.
